Use a Meat Thermometer
The most accurate way to check doneness is with a meat thermometer. Insert into the thickest part of the steak for an accurate reading.
Let It Rest
Always let your steak rest for 5-10 minutes after cooking. This allows the juices to redistribute throughout the meat.
Season Generously
Season your steak with salt and pepper at least 40 minutes before cooking, or right before it hits the grill.
High Heat Sear
Start with high heat to get a nice sear on the outside, then move to indirect heat to finish cooking if needed.
